Mullet fillets (or most flesh baits) with a single hook, go through the fleshy side out throgh the skin (near the middle somewhere) down a bit then back throgh the skin and out through the flesh. half hitch around the top to hold the fillet and your'e done, If only going through the bait once, go from skin to flesh side, and half hitch at top.

For worms, get worm hooks from the tackle store, they have bait holders that stop the worm from sliding down, leave a bit of worm dangling off the end of the hook for presentation, and to give the bait some movement in the water.
